Using a pre-marinated pork tenderloin and a bag of broccoli slaw make this recipe a really quick weeknight meal to throw together. It’s also really good!
- 1 18oz pork tenderloin, sliced thin (I used a teriyaki one)
- 1 TBS sesame oil
- 1 TBS cornstarch
- 1/3 cup soy sauce
- 1 tsp ground ginger
- 1/2 tsp garlic powder
- 1 TBS brown sugar
- 2 TBS rice wine vinegar
- 6 scallions, sliced
- 1 12oz bag of broccoli slaw
- 8 oz of spaghetti
In a large skillet or stir-fry pan, heat the sesame oil over medium high heat. Add the pork and cook until starting to brown.
Meanwhile, cook the spaghetti according to package directions. Drain and set aside.
Sprinkle the cornstarch over the pork and cook for a minute or so stirring. Add the soy sauce, ginger, garlic powder, brown sugar and vinegar. Stir and let thicken a bit. Add the broccoli slaw and scallions. I like the veggies to stay crispy, so I only cook it for a few minutes. Add the spaghetti and stir.
A pretty easy and quick meal without too much mess to clean up! Enjoy.
